New Leaf Tree Syrups Connects the Coasts with Bigleaf Maple Syrup Debut at the Winter Fancy Food Show

SAN FRANCISCO, Ca. (January 19, 2020) - The Forest Farmers and New Leaf Tree Syrups will be debuting its very own signature blend of bigleaf maple syrup from the Pacific Northwest alongside its current variety of syrups harvested from its Northeastern forests at the Winter Fancy Food Show at San Francisco’s Moscone Center, January 19-21, at booth #5475.

Michael Farrell, co-founder of The Forest Farmers and New Leaf Tree Syrups, is working with researchers at the University of Washington to determine best practices for producing maple syrup from native, west coast bigleaf maple trees. Farrell originally started researching bigleaf maple syrup production when he was director of Cornell University's Maple Syrup Research Center in Lake Placid, N.Y. from 2005 to 2017. He is now focusing his New England-based companies’ efforts on expanding bigleaf maple syrup production through a partnership with private landowners and University of Washington researchers.

“Because this type of maple tree is native to the Pacific coast and was previously only produced on a small scale, our goal is to introduce syrup lovers across the country to the exciting taste of bigleaf maple syrup,” says Farrell.

Bigleaf maple (Acer macrophyllum) is a variety of maple native to the Pacific coast, with stands ranging from southern California north to southern Alaska. Although bigleaf maple sap has been produced on a small scale by a limited number of people, a significant potential exists to expand production with modern technologies adapted from the east coast. The best opportunities exist in Washington state where the climate and density of bigleaf maples is most conducive to syrup production.
